taco stuffed shells

Ingredients
  

For the filling
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 cup refried beans
  • 1 cup corn canned or frozen
  • 1 cup shredded cheese cheddar or Mexican blend
For the shells
  • 12 large jumbo pasta shells uncooked
  • 2 cups salsa for layering
  • 1 cup shredded cheese for topping

Method
 

Prepare the shells
  1. Preheat the oven to 350°F (175°C). Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
Make the filling
  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat. Stir in taco seasoning, refried beans, and corn. Cook for an additional 5 minutes until heated through.
Stuff the shells
  1. Spread 1 cup of salsa on the bottom of a baking dish. Stuff each cooked shell with the taco filling and place them in the baking dish. Pour remaining salsa over the shells and sprinkle with shredded cheese.
Bake
  1. Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
Serve
  1. Let the taco stuffed shells cool for a few minutes before serving. Enjoy with your favorite toppings like sour cream, avocado, or cilantro.
