Prepare the Bread
- Slice the bolillo rolls in half lengthwise without cutting all the way through.
Assemble the Tortas
- Spread a generous layer of refried beans on the bottom half of each roll.
- Add a layer of shredded chicken on top of the beans.
- Top with sliced avocado, tomatoes, and lettuce.
- Drizzle with sour cream and hot sauce if desired.
Grill the Tortas
- Heat a griddle over medium heat and place the assembled tortas on it.
- Press down gently with a spatula and grill for about 3-4 minutes on each side until golden and crispy.
Serve
- Remove from the griddle, slice in half if desired, and serve immediately.
