Frying the Plantains
- Heat the vegetable oil in a frying pan over medium heat until hot.
- Add the plantain slices to the hot oil and fry for about 3-4 minutes on each side, until they are golden and slightly soft.
- Remove the fried plantains from the oil and drain on paper towels.
Flattening and Second Fry
- Using a heavy object, flatten each fried plantain slice to about 1/2 inch thick.
- Return the flattened plantains to the hot oil and fry again for 2-3 minutes on each side until they are crispy and golden brown.
- Remove from oil, drain on paper towels, and sprinkle with salt.
