Sandwich Ingredients
  • 8 slices whole grain bread or your choice of bread
  • 12 oz sliced turkey breast deli-style
  • 1 cup pesto sauce store-bought or homemade
  • 4 slices provolone cheese or mozzarella
  • 1 cup fresh spinach or arugula
  • 1 medium tomato sliced
  • 1 tablespoon olive oil for drizzling

Method
 

Assemble the Sandwich
  1. Lay out 4 slices of bread on a clean cutting board.
  2. Spread a generous layer of pesto sauce on each slice of bread.
  3. Layer the sliced turkey breast evenly on top of the pesto.
  4. Add a slice of provolone cheese on top of the turkey.
  5. Top with fresh spinach and tomato slices.
  6. Drizzle a little olive oil over the vegetables.
  7. Finish with another slice of bread on top, pressing down gently.
Serve
  1. Cut the sandwiches in half diagonally with a sharp knife.
  2. Serve immediately with your favorite side, like chips or a salad.
