Ingredients
  

Vegetables
  • 4 cups yellow squash, sliced about 2 medium squash
  • 1 cup onion, chopped yellow or white onion
Dairy
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1 cup milk
Pantry
  • 1 cup cornbread mix
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

Prepare the Squash
  1. Preheat the oven to 350°F (175°C). In a skillet over medium heat, sauté the chopped onion until translucent, about 5 minutes. Add the sliced yellow squash and cook for another 5-7 minutes until slightly tender.
Mix Ingredients
  1. In a mixing bowl, combine the sautéed squash and onion with sour cream, milk, cornbread mix, eggs, salt, and pepper. Stir until well combined.
Bake the Casserole
  1. Pour the mixture into a greased 9x13 inch baking dish. Sprinkle shredded cheddar cheese on top. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the casserole is set.
Serve
  1. Allow to cool for a few minutes before serving. Enjoy your delicious yellow squash casserole!

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if baking from cold.
