Prepare the Squash
- Preheat the oven to 350°F (175°C). In a skillet over medium heat, sauté the chopped onion until translucent, about 5 minutes. Add the sliced yellow squash and cook for another 5-7 minutes until slightly tender.
Mix Ingredients
- In a mixing bowl, combine the sautéed squash and onion with sour cream, milk, cornbread mix, eggs, salt, and pepper. Stir until well combined.
Bake the Casserole
- Pour the mixture into a greased 9x13 inch baking dish. Sprinkle shredded cheddar cheese on top. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the casserole is set.
